First we wash the smoked ciolan very well in hot water. Then we cut it in several places, without deboning it. We clean the vegetables and chop them. I chopped a carrot into cubes, and I put one on the grater to color the soup nicely. We take the ceramic pot from the appliance and transfer it to the stove. Put 2 tablespoons of oil in it and sauté the onion, along with the garlic, just until it changes color slightly. Add the carrots and parsnips and continue to harden for 2-3 minutes. Chop the cabbage and add it to the bowl. Add the smoked ciolan and fill with enough water to fill the pot for 3/4 of its capacity.
