Kristen Chidsey is the blogger behind A Mind “Full” Mom, and she’s this week’s featured member of our CCN. She is an Atlanta-based mother to two children, but is soon moving to Charlotte, North Carolina. Chidsey is passionate about living a healthy and wholesome life and shares recipes and inspiration with her readers.
The Daily Meal: What is the mission of your blog?
Kristen Chidsey: To inspire families with real food on a real budget.
How did you get started with blogging?
My husband told me that I had three months to give it a go to see if I liked blogging. He said it is now or never. I wanted to wait until I knew more, but I just dived right in and am learning new things every day.
What are some foods you can’t live without?
Chocolate, peanut butter, and sweet potatoes.
What are some foods you can’t stand?
Seafood and fish (sad, I know!).
What blog post are you most proud of?
My first post, which is called Having My Mind "Full." If I wasn't bold enough to post that, I would have never gotten started with my blog.
What is your biggest blog blunder?
Pictures. They were horrific in the beginning, and still have a long way to go.
What is your most memorable comment from a reader?
When a reader commented on my post about my health condition. She said my story helped her son get the treatment he needed and helped to answer questions regarding his health. I am so blessed to be able to help others through my blog and my story.
What’s on your cooking playlist?
I love just about everything, from ’80s to country to dance. I am usually singing and dancing away while cooking, and would be an embarrassment to my children!
What are your favorite food blogs?
Lauren Kelly Nutrition, Half Baked Harvest, Pinch of Yum, and Two Peas and Their Pod.
Any favorite food apps?
Really just Pinterest and Yummly. I am not much of a tech person!
What is the best thing about blogging?
Being able to share my passions with others, and the ability to work from home so I can take care of my health and my family.
Worst things about blogging?
Feeling like I am always connected. It is not a 9-to-5 job, but I love it!
Do you have a recipe you’re currently obsessed with?
My Southwestern Sweet Potato Hash with Cilantro Pesto. It is hearty, full of flavor, full of protein, and, most importantly, sets the tone for a great day.
What would even your most loyal followers be surprised to learn about you?
I secretly crave Wonder Bread with Jif peanut butter and Welch's grape jelly. It is what I grew up eating, and though I eat clean now, there are times when I just want it!
